Salinas de Añana (Araba), 30 km from Vitoria-Gasteiz, is home to one of the oldest salt production sites in the world: The Salt Valley of Añana.
After 7,000 years of the uninterrupted production of a product that is essential for human beings, salt, 20th century industrialisation almost caused it to disappear. This process was reversed in 2009 when the Añana Salt Valley Foundation was established and charged with managing, recovering, and enhancing the site.
One of the key goals is to produce salt of the highest quality using traditional and sustainable techniques that respect the environment.
The Foundation offers three types of natural salt rich in oligo elements and endorsed by a number of chefs who have a total of 25 Michelin Stars among them. Mineral salt from the springs, Salt Flower Flakes (Fleur de Sel), and Salt “Chuzos” (sticks).
